Mycotoxins in traditional Croatian meat products

This Project aims at identifying the mould species and pinpointing the genes responsible for the production of mycotoxins as secondary metabolites overgrowing surfaces of TMPs produced in various Croatian regions differing in their climate, as well as at assessing TMP consumption – mediated consumer exposure to mycotoxins.

Contamination - scientific research

In order to establish TMP contamination with mycotoxins, the concentrations of AFB1, OTA, CIT, STC and CPA shall be determined, preceded by the development of analytical techniques suitable for the determination of yet only poorly investigated STC and CPA.
